Big Mama's Rib Shack Big Mama’s has been cooking, serving and selling Southern “down home” food for over 75 years.
Born in Burda, Georgia, Big Mama migrated north to Chattanooga, TN. She has owned and operated numerous restaurants in Chattanooga, Old Town Pasadena and Las Vegas.
Her son Dargin McWhorter first opened the doors of Big Mama’s Cooking, Inc. on March 7th, 1992 in Las Vegas with the help and support of his wife and children. Since this opening, Dargin has overcome many obstacles and has put Big Mama’s on the map. Big Mama’s continues to be a family owned and operated restaurant that attracts both locals and celebrities because of its unique dining experience and sumptuous food. All entrees and desserts are prepared fresh daily to order. It is true “down home” Southern food crafted with careful attention to the tradition and love handed down from Big Mama’s original recipes.

I started going to Big Mama's years ago when I first lived in Pasadena.  I introduced it to my African American friends to burnish my rep as a foodie, who enjoyed it as much as I did.  We ate there frequently and I used to order take out from them on the evenings I was too lazy to cook.  When I moved out of Pasadena in 2004, I kept saying that I needed to go back to Big Mama's.  Well, that time has finally come, as I recently moved back to the 'hood.  I met a couple of friends I used to go to Big Mama's with for dinner last Friday night.  

I ordered what I always ordered, BBQ pork ribs with cole slaw and collard greens.  My BF ordered the baby back ribs with cajun fries and hush puppies.  Admittedly, the baby backs were more tender but the pork ribs were meatier.  But the best thing is the SAUCE!  Damn, that bbq sauce is finger lickin' good!  It's slightly sweet, slightly spicy, slightly smoky.  The ribs at Baby Blues are a bit better but Mama's sauce is sheer perfection.  

Mama's has a wide variety of sides.  I'm partial to the cole slaw, collard greens, and spicy cabbage.  You get a bowl of mini corn bread to start off your meal.  The desserts are also tasty, get the pecan pie, sweet potatoe pie, or the peach cobbler.  They're nothing fancy to look at but they're good.  The prices are reasonable and the service is friendly, though can be a bit slow at times.

I had juicy dark meat fried chicken and so far, I think it's the best I've had other than my aunt's home made fried chicken. The batter is seasoned just right that it has just enough salt and a bit of a peppery taste on the crispy fried skin. (For $1.50 more, you can get the white meat).

As people have already mentioned before, Big Mama's is no shack, it's a proper sit down place. On Sundays you can see families coming from service and even ladies still wearing their church  hats. You can sit in the main dining area near the gigantic TV and watch whatever game is on or unfortunately for us last time,  Fox News. (A side of aspirin please).

From what I've eaten, I can recommend the following:
The fried chicken, file' gumbo, sliced BBQ pork smoked in their pit, collard greens, and  mac and cheese( (Note: The mac and cheese doesn't have a bread crumb top so it's not crusty as I usually like it but it's still good). The desserts are made daily or every other day: peach cobber and the red velvet cake. We had a slice of red velvet cake just right after it was frosted. Delicious!

BBQ, Cajun and Creole dishes. The menu goes up $2 to $3 from lunch to dinner. Dine in or take out. Closed Mondays --but the baker may be in the kitchen baking temptation!

Big Mama's Rib Shack I worked in Pasadena for three years and have eaten here a handful of times.  Now I say forget Roscoes, KFC, Popeyes, and Churches Chicken.  For soul food, this is the right place (North Pasadena), in the right time (hungry time), with the right rhyme (soul baby).

Though it is a "rib shack", the fried chicken is what first comes to mind.  Order a plate of the wings and thighs and you'll never have juicier, crunchier, or tastier fried chicken in your life.

FOOD: Some notable dishes are the pork chop with gravy, pork ribs, beef ribs,  mac and cheese, and hush puppies.  Don't get the seafood here, it's not all that.  

SERVICE: Because it's a soulfood restaurant, and I like to take my time nibbling all the meat off the chicken and ribs, I don't consider the service SLOW.  But don't expect the waiter to be at your beck and call, he's probably busy helping big mama bread up the new batch in the back!
